A delicious and hearty soup made with fresh potatoes and fish, perfect for any occasion. Preparation Time: 45 minutes
Serving Size: 4-6 servings
Ingredients:
- Oil - About 10 small potatoes
- A couple of carrots
- 1 onion
- 1 small garlic clove
- A piece of fresh fennel (about the size of a small onion)
- 2 tablespoons tomato paste
- 6-8 cups fish broth
- About 400 g pike or other white fish
- 1 small pickle
- 2 tablespoons capers
- White pepper
- (Salt)
Instructions:
1. Chop the onion, garlic, and fennel. 2. Sauté the chopped ingredients in oil in a pot for a few minutes.
3. Add the peeled and diced potatoes and sliced carrots to the pot.
4. Stir in the tomato paste and cook for a moment while stirring.
5. Pour in the fish broth and bring the soup to a boil until the potatoes are almost cooked.
6. Cut the fish into bite-sized pieces and add it to the pot.
7. Cover the pot and let the fish steam for a few minutes.
8. Finally, add the sliced pickle and capers.
9. Adjust salt to taste and add white pepper as desired.
10. Serve with a dollop of sour cream.
