Ingredients:
- 4 parsnips
- 3 tablespoons olive oil
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
- Fresh herbs (e.g., thyme or rosemary) for garnish
- (Optional) Grated Parmesan cheese
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Wash and peel the parsnips. Cut them lengthwise, but do not cut all the way through; leave about 1 cm intact at the bottom.
3. Place the parsnips in a baking dish.
4. In a bowl, mix the olive oil and melted butter. Pour the mixture over the parsnips and rub it in evenly.
5. Season with salt and pepper.
6. Bake the parsnips in the oven for about 40-50 minutes, until they are golden brown and tender. If desired, add grated Parmesan cheese during the last 10 minutes of baking.
7. Remove the parsnips from the oven and garnish with fresh herbs before serving.
8. Serve warm as a side dish for your holiday table!
