Preparation Time: 4 days (plus 10 minutes)
Serving Size: 2 egg yolks
Ingredients:
- 2 egg yolks
- 50 g salt
- 50 g sugar
- (optional: herbs for flavor)
Instructions:
1. Prepare the salt-sugar mixture by combining the salt and sugar in a bowl. If desired, add herbs for extra flavor.
2. Spread a portion of the salt-sugar mixture evenly on the bottom of a container.
3. Carefully place the egg yolks on top of the mixture, ensuring they do not break.
4. Pour the remaining salt-sugar mixture over the egg yolks, completely covering them.
5. Seal the container tightly with a lid and refrigerate. Allow the yolks to cure for at least four days.
6. After the curing period, gently remove the yolks and check that they have firmed up.
7. Rinse off any excess salt and sugar from the yolks.
8. Use the gravlax egg yolks in your favorite dishes, such as salads, pastas, or stir-fries.
