A delicious pasta dish that comes together quickly, perfect for a weeknight dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve some of the pasta water.
2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about one minute.
3. Add the diced red bell pepper and cook for a few more minutes until softened.
4. Add the halved cherry tomatoes and cook until they begin to soften.
5. Add the fresh spinach to the skillet and stir until it wilts.
6. Combine the cooked pasta with the skillet ingredients, mixing everything well. Add a little reserved pasta water if needed to keep the pasta moist.
7. Season with salt and pepper to taste. Sprinkle grated parmesan cheese on top and garnish with fresh basil.
8. Serve immediately and enjoy!
