A delicious and hearty dish perfect for dinner. It takes just a little time to prepare, but the result is worth the effort. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g arborio rice - 1 l vegetable broth
- 200 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 onion
- 2 garlic cloves
- 100 ml white wine
- 50 g butter
- 50 g grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. In a large pan, sauté the chopped onion and garlic in butter over medium heat until softened. 2. Add the chopped mushrooms to the pan and cook until they are tender and the moisture has evaporated.
3. Stir in the arborio rice, making sure to coat it well in the butter.
4. Pour in the white wine and let it simmer until the rice has absorbed the liquid.
5. Gradually add the hot vegetable broth, one ladle at a time, stirring continuously until the liquid is absorbed. Repeat until the rice is cooked but still al dente, about 18-20 minutes.
6. Remove the pan from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
7. Serve immediately, garnished with fresh parsley.
