A delightful and moist apricot pie, combining the tanginess of sour cream with a sweet crust. Perfect for a coffee table treat! Preparation Time: 40 minutes
Serving Size: 8-10 servings
Ingredients
- Crust: - 125 g butter
- 1 dl sugar
- 1 egg
- 2.5 dl all-purpose flour
- 1 tsp baking soda
- Filling:
- 1 cup sour cream
- 1 egg
- 1 tsp cinnamon
- Halved apricots
Instructions
1. Allow the butter to soften at room temperature. Whip the butter and sugar together until light and fluffy. 2. Add the egg to the mixture and mix well.
3. In a separate bowl, combine the flour and baking soda, then add them to the mixture. Stir until smooth.
4. Press the dough into a pie dish (26-28 cm) using a spatula and fingers dipped in cold water.
5. Prepare the filling: Mix the sour cream, egg, and cinnamon together. Pour the mixture over the pie crust.
6. Arrange the apricot halves on top of the filling, cut side down.
7. Bake in a preheated oven at 200°C (392°F) for about 20 minutes, or until the top is beautifully golden brown.
