A delightful twist on Finnish cinnamon rolls in pancake form. Perfect for breakfast or a sweet treat!
Preparation Time: 1 hour
Serving Size: 12 pancakes
Ingredients:
- Pancake Batter:
- 2 eggs
- 1 teaspoon cardamom
- 1 tablespoon brown sugar
- 1 teaspoon vanilla sugar
- A pinch of salt
- 2 tablespoons rapeseed oil
- 1.5 dl (150 ml) red milk
- 2 dl (200 g) all-purpose flour
- 1 teaspoon baking powder
- Cinnamon Filling:
- 80 g melted butter
- 80 g brown sugar
- 2 tablespoons cinnamon
- 1 tablespoon potato starch
Instructions:
1. In a bowl, whisk the eggs and mix in the cardamom, brown sugar, vanilla sugar, salt, and rapeseed oil.
2. Add the milk and flour combined with baking powder. Mix until smooth and let the batter rest for about 30 minutes.
3. Grease a muffin tin with butter and pipe a layer of the cinnamon filling into each cavity.
4. Spoon the pancake batter into the cavities and pipe more cinnamon filling on top.
5. Sprinkle with coarse sugar and bake in a preheated oven at 180°C (350°F) for 15-20 minutes.
6. Optionally, finish with powdered sugar and coarse sugar for garnish.
Cinnamon Filling Preparation:
1. In a bowl, mix melted butter, brown sugar, cinnamon, and potato starch.
2. Transfer the filling into a piping bag.
