Karelian Pies (Karjalanpiirakat)

Delicious and easy Finnish pastries that can be frozen and baked later. Preparation Time: 1 hour
Serving Size: Approximately 12 pies
Ingredients:
- 2 dl water- 1 dl rice
- 3 dl milk
- 2 dl rye flour
- 1 dl wheat flour
- 1 tsp salt
- 1 tbsp butter (for filling)
- 1 egg (for brushing)
Instructions:
1. Cook the rice in water until tender.2. Add milk to the rice and let the mixture simmer over low heat.
3. In a bowl, mix the rye flour, wheat flour, and salt.
4. Combine the flour mixture with the rice and milk mixture, kneading until smooth.
5. Divide the dough into small pieces and roll them out into thin circles.
6. Place the rice filling (cooked rice and butter) in the center of each circle.
7. Fold the edges over and shape the pies.
8. Brush the pies with beaten egg.
9. Bake at 250°C (482°F) for about 15-20 minutes until golden brown.
10. Let cool and freeze if desired.
