A traditional dish from Oulu, Rössypottu is a comforting meal made from flavorful meat broth, potatoes, and rössy, perfect for cold winter days.

Serving Size: 2 generous servings

Ingredients:

- 300 g starchy potatoes
- 150 g smoked pork belly
- 250 g rössy (blood sausage)
- 1 onion
- Water (or meat broth)
- A few allspice berries
- 2 bay leaves
- Fine sea salt
- Chopped fresh parsley
Anchovy Butter:
- 5 anchovy fillets
- 75 g butter
- Chopped fresh parsley

Instructions:

1. Prepare the anchovy butter by melting the butter. Mash the anchovy fillets with a fork and mix them with the chopped parsley into the melted butter.
2. Peel and chop the potatoes into bite-sized pieces. Also, chop the smoked pork belly and onion into coarse pieces. Cut the rössy into cubes about 3 x 3 cm in size.
3. Heat the meat broth or water in a pot and add the potatoes and onion. Cook until the potatoes are just tender.
4. Sauté the pork belly in a pan until browned, then add it to the pot with the potatoes and onion. Add the allspice, bay leaves, and 1-2 crushed rössy cubes.
5. Let it simmer until the potatoes start to break down. Add the remaining rössy cubes and simmer gently for another 5 minutes.
6. Check the seasoning and add salt if necessary.
7. Serve the rössy cubes on plates and ladle the potato soup over them. Add anchovy butter on top if desired, and enjoy this traditional dish with a glass of cold milk.
