A delightful Lego Ninjago cake perfect for a 7-year-old's birthday celebration, featuring a refreshing raspberry mousse filling and a delicious chocolate cake base. Preparation Time: 1 hour + cooling time
Serving Size: 10-12 servings
Ingredients:
- Chocolate Cake Base:- 200 g dark chocolate
- 150 g butter
- 3 dl sugar
- 5 eggs
- 2.5 dl all-purpose flour
- 1 tsp baking powder
- Raspberry Mousse:
- 300 g fresh or frozen raspberries
- 2 dl heavy cream
- 1 dl sugar
- 1 tsp vanilla sugar
- 2 gelatin sheets
- 0.5 dl water
- Decoration:
- Lego Ninjago themed decorations
- Chocolate shavings or sprinkles
Instructions:
1. Prepare the Chocolate Cake Base:- Melt the dark chocolate and butter together in a saucepan over low heat.
- Whisk the eggs and sugar until fluffy.
- Combine the melted chocolate mixture with the egg mixture.
- Fold in the all-purpose flour and baking powder.
- Pour the batter into a greased and floured cake pan.
- Bake at 175°C (350°F) for about 25-30 minutes. Allow to cool.
2. Make the Raspberry Mousse:
- Soak the gelatin sheets in cold water for about 5 minutes.
- Heat 0.5 dl of water and dissolve the gelatin sheets in it.
- Puree the raspberries, sugar, and vanilla sugar. Mix in the gelatin solution.
- Whip the heavy cream and fold it into the raspberry puree.
3. Assemble the Cake:
- Slice the cooled cake base into two or three layers.
- Spread raspberry mousse on the first layer and place the next cake layer on top.
- Repeat until all layers are assembled. Refrigerate the cake for at least 2 hours.
4. Decoration:
- Decorate the cake with Lego Ninjago themed decorations and add chocolate shavings or sprinkles if desired.
