A delicate and flavorful mint cake made with strong mint tea and honey. Perfect for dessert or to enjoy with coffee. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 1½ dl baking soda
- 6 tbsp honey
- 1 dl raisins
- 3 dl strong mint tea
- 4 dl all-purpose flour
- 50 g butter
- A pinch of sea salt
Instructions:
1. Melt the butter in a saucepan over low heat.
2. Add honey and a pinch of sea salt to the melted butter. Bring the mixture to a boil.
3. Stir in the raisins and mix well. Allow the mixture to cool slightly.
4. Pour in the strong mint tea and mix thoroughly.
5. Combine the flour and baking soda, then fold them into the batter. The batter will bubble.
6. Pour the batter into a shallow baking dish.
7. Bake at 180°C (350°F) for about 30-40 minutes or until the cake is fully cooked.
