A delicious Eastern European meat soup perfect for utilizing leftover meats and assorted vegetables. This hearty soup warms both the heart and body.
Preparation Time: 1 hour
Serving Size: 4-6 servings

Ingredients:

- 500 g cooked meat (such as beef or pork)
- 1 large onion
- 2-3 carrots
- 2-3 potatoes
- 1 bell pepper
- 1-2 garlic cloves
- 1 liter beef broth or water
- 2 tablespoons tomato paste
- 2-3 bay leaves
- Salt and pepper to taste
- 1 teaspoon dried oregano or thyme
- Fresh parsley for garnish

Instructions:

1. Peel and chop the onion, carrots, potatoes, and bell pepper.
2. Heat a little oil in a pot and sauté the onion until soft.
3. Add the carrots and bell pepper, and sauté for a few more minutes.
4. Add the chopped meat to the pot and mix well.
5. Pour in the broth or water, and add the tomato paste, bay leaves, salt, pepper, and herbs.
6. Let the soup simmer on low heat for about 30-40 minutes until the vegetables are tender.
7. Remove the bay leaves, taste, and adjust the seasoning if necessary.
8. Serve hot, garnished with fresh parsley.
