A delicious and spicy vegetarian dish combining basmati rice and cauliflower, perfect as a main course or side dish.
Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 1 ½ cups basmati rice
- 1 small cauliflower, chopped
- 1 large onion, sliced
- 2 tomatoes, diced
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 cinnamon stick
- 3-4 cardamom pods
- 4-5 cloves
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander for garnish
Instructions:
1. Rinse the basmati rice in cold water and soak it for about 30 minutes.
2. Heat the oil in a large pot and add cumin seeds, cinnamon stick, cardamom pods, and cloves. Sauté the spices for a few seconds until fragrant.
3. Add the sliced onion and cook until golden brown.
4. Add the chopped cauliflower and sauté for a few minutes until it softens slightly.
5. Stir in the diced tomatoes, turmeric, garam masala, and salt. Mix well and cook until the tomatoes are soft.
6. Drain the rice and add it to the pot. Pour in 3 cups of water and stir gently.
7. Once the water begins to boil, reduce the heat to low and cover the pot. Cook for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
8. Remove the pot from heat and let it rest covered for 5 minutes.
9. Fluff gently with a fork and garnish with fresh coriander before serving.
