Moscow Stew with Horse Fillet

A delicious and hearty stew made from horse fillet, perfect for serving a larger group. Preparation Time: 1 hour

Ingredients:
- 1.2 kg horse fillet, diced
- 3 onions, finely chopped
- 2 + 1 Russian pickles, diced
- Butter
- 3 tablespoons liquid honey
- 2 teaspoons crushed black pepper
- Cayenne pepper to taste
- 3 tablespoons all-purpose flour
- 5 dl beef broth
- 150 g blue cheese, crumbled
- 240 g sour cream
Instructions:
1. Dice the horse fillet and brown it in clarified butter in batches for 2-3 minutes. Set the meat aside.
2. Sauté the onions in a pot with butter and add 2 diced pickles. Stir for a couple of minutes.
3. Add the crushed black pepper and cayenne pepper, and sauté for a moment.
4. Return the browned meat to the pot and mix well. Sprinkle the flour on top and stir thoroughly.
5. Pour in the beef broth and mix. Add the crumbled blue cheese and stir until melted.
6. Add the sour cream to the pot and mix again.
7. Cover with a lid and bake in the oven at 180°C (350°F) for 45 minutes.
8. Let the stew simmer for a while on the stove before serving.
9. Before serving, add the third diced pickle on top as a garnish.
Serve with boiled potatoes.
