Juhannuskeitto - Finnish Midsummer Soup

Ingredients:
- 2 potatoes
- 3 carrots
- 1 onion
- 1 leek
- 2 dl cream
- 1 liter vegetable broth
- Salt to taste
- Black pepper to taste
- Fresh herbs (such as parsley)
Instructions:
1. Peel and chop the potatoes, carrots, onion, and leek.
2. Heat a little oil in a pot and sauté the onion and leek for a few minutes.
3. Add the chopped potatoes and carrots to the pot, and continue sautéing for about 5 minutes.
4. Pour the vegetable broth into the pot and cook until the vegetables are tender.
5. Stir in the cream and season with salt and black pepper. Mix well and heat through.
6. Serve the soup garnished with fresh herbs.
