Ingredients:
- 200 g quinoa - 1 avocado
- 1 red bell pepper
- 1 cucumber
- 100 g cherry tomatoes
- 1 red onion
- 100 g feta cheese
- 50 g fresh parsley
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Cook the quinoa according to the package instructions and let it cool. 2. Peel and dice the avocado.
3. Chop the red bell pepper, cucumber, and red onion into small pieces.
4. Halve the cherry tomatoes.
5. In a large bowl, combine all the vegetables, quinoa, and crumbled feta cheese.
6. Chop the fresh parsley and add it to the salad.
7. In a separate bowl, mix the olive oil and balsamic vinegar, then pour it over the salad.
8. Season with salt and pepper, and mix well.
9. Serve immediately or let it chill in the refrigerator for a while before serving.
