Ingredients:
- 4 perch fillets
- 200 g fresh chanterelles
- 4 medium potatoes
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
- Fresh parsley (optional)
Instructions:
1. Boil the potatoes in salted water until tender. Drain and keep warm.
2. Heat the butter in a skillet over medium heat. Add the chanterelles and sauté for about 5-7 minutes until golden brown. Season with salt and pepper.
3. Remove the chanterelles from the skillet and keep warm.
4. In the same skillet, sear the perch fillets for about 3-4 minutes on each side until beautifully golden brown. Season with salt and pepper.
5. Serve the pan-seared perch fillets with the chanterelles alongside the boiled potatoes. Optionally, garnish the dish with fresh parsley.
