Serving Size: 4 servings
Ingredients:
- 400 g coconut milk
- 200 g peanut butter
- 2 tbsp curry paste
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, sliced
- 200 g green beans
- 1 tbsp oil
- Salt to taste
- Fresh coriander for garnish
Instructions:
1. Heat the oil in a large pan over medium heat.
2. Add the chopped onion and crushed garlic, sauté until they are soft.
3. Add the sliced red bell pepper and green beans, and cook for about 5 minutes.
4. Stir in the curry paste and cook for another 1-2 minutes.
5. Pour in the coconut milk and peanut butter, mixing well.
6. Allow the curry to simmer on low heat for about 10 minutes, until the vegetables are tender.
7. Season with salt to taste and serve garnished with fresh coriander.
