A hearty and flavorful Finnish blood sausage soup that combines a variety of vegetables and meats, perfect for cold winter evenings. Preparation Time: 60 minutes
Serving Size: 4-6 servings
Ingredients:
- 1.5 liters of water - 2 rutabagas
- 1 leek
- 2 tablespoons of butter
- 2 parsnips
- 100 grams of bacon
- 1 onion
- 1 tablespoon of syrup
- 3 potatoes
- 2 carrots
- 5 allspice berries
- 1 teaspoon of thyme
- 1 beef broth cube
- 1 bay leaf
- 150 grams of smoked ham
- 200 grams of blood sausage
Instructions:
1. Dice all the vegetables: rutabaga, leek, parsnip, potatoes, and carrots.2. Add the diced vegetables to boiling water (approximately 1.5 liters) and cook for about 20 minutes.
3. Dice the bacon and smoked ham. Add them to the soup when the vegetables are nearly tender.
4. Stir in the spices: allspice, thyme, beef broth cube, and bay leaf.
5. Slice the blood sausage into 1 cm thick pieces and add them to the soup.
6. Add a knob of butter and a small splash of syrup. Mix well.
7. Taste and adjust seasoning as needed.
