A quick and healthy dish packed with colorful vegetables and a savory sauce. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)
- Cooked rice or noodles, for serving
Instructions:
1. Heat the vegetable oil in a large skillet over medium-high heat.
2. Add the garlic and ginger, sautéing for about 30 seconds until fragrant.
3. Add the bell pepper, broccoli, snap peas, and carrot. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
4. Pour in the soy sauce and sesame oil. If you prefer a thicker sauce, add the cornstarch mixture and stir well. Cook for another minute.
5. Serve the stir-fry over cooked rice or noodles.
