A delicious and hearty vegan mushroom pie, perfect for lunch or dinner.

Ingredients:
- 200 g vegan pie crust
- 300 g fresh mushrooms (e.g., button, portobello, or shiitake)
- 1 medium onion
- 2 cloves garlic
- 200 ml oat milk
- 2 tbsp cornstarch
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., thyme or parsley)
Instructions:
1. Heat olive oil in a pan over medium heat. Add chopped onion and garlic, sauté until soft and translucent.
2. Add chopped mushrooms to the pan and cook until golden brown and the moisture has evaporated.
3. In a bowl, mix oat milk and cornstarch. Pour the mixture into the mushrooms and stir well. Season with salt, pepper, and fresh herbs.
4. Roll out the pie crust and place it in a pie dish. Pour the mushroom mixture over the crust.
5. Bake at 180 °C (350 °F) for about 30-35 minutes or until the crust edges are golden brown.
6. Allow the pie to cool slightly before serving. Enjoy!
