Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine) - 150 g bacon or guanciale
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt (to taste)
- Black pepper (to taste)
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. 2. While the pasta cooks, fry the bacon or guanciale in a pan over medium heat until crispy. Add the minced garlic and cook for an additional minute.
3. In a bowl, crack the eggs and add the grated Parmesan cheese. Mix well.
4. Once the pasta is ready, drain it, reserving a little pasta water.
5. Add the hot pasta to the pan with the bacon and garlic. Remove the pan from heat.
6. Pour the egg mixture over the pasta and mix quickly to prevent the eggs from cooking too much. If needed, add reserved pasta water to achieve a creamy sauce.
7. Season with salt and black pepper to taste. Serve immediately with fresh parsley if desired.
