Rosemary Biscuits

A delightful herb-infused biscuit, perfect as a snack or to accompany meals. Preparation Time: 30 minutes
Serving Size: 12 biscuits
Ingredients:
- 100 g butter, cubed
- 1 ½ dl rye flour
- 1 ½ dl all-purpose flour
- 1 tsp baking powder
- ¾ tsp salt
- 2 tsp fresh rosemary, finely chopped
- 2-3 tbsp cold water
- (sea salt flakes for topping)
Instructions:
1. Place the cold butter cubes in a mixing bowl.
2. Add the rye flour, all-purpose flour, baking powder, salt, and chopped rosemary. Mix until the mixture resembles crumbs.
3. Gradually add the cold water and mix to form a dough, being careful not to overmix.
4. Preheat the oven to 200°C (392°F).
5. Turn the dough out onto a floured surface. Sprinkle flour on top and roll it out to a thin sheet.
6. Use a cookie cutter to cut out circles or any desired shapes from the dough.
7. Transfer the shapes to a baking sheet lined with parchment paper, prick the tops, and sprinkle with sea salt flakes if desired.
8. Bake in the middle or upper part of the oven for about 10 minutes or until golden.
