Ingredients:
- 200 g pasta (spaghetti or penne)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 100 g cherry tomatoes, halved
- 100 g spinach
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until golden brown.
3. Add the cherry tomatoes and cook for about 3-4 minutes until they soften.
4. Stir in the spinach and cook until wilted. Season with salt and pepper.
5. Toss the cooked pasta with the vegetables. If needed, add a little reserved cooking water to keep it moist.
6. Grate Parmesan cheese over the dish and garnish with fresh basil before serving.
