Ingredients:
- 2 cups cooked chickpeas (canned or cooked from scratch)
- 1 cup rolled oats
- 1 small red onion, finely chopped
- 2 garlic cloves, minced
- 1 cup grated carrot
- 1 cup fresh herbs (such as parsley or cilantro), chopped
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons olive oil (for frying)
Instructions:
1. Mash the chickpeas in a bowl using a fork or potato masher.
2. Add the rolled oats, red onion, garlic, grated carrot, herbs, lemon juice, salt, black pepper, and paprika to the mashed chickpeas. Mix well.
3. Shape the mixture into evenly sized patties.
4. Heat olive oil in a frying pan over medium heat.
5. Fry the patties for about 4-5 minutes on each side until golden brown.
6. Serve warm, perhaps with a salad or dipping sauce.
