A delicious potato bake combining creamy potatoes, crispy bacon, and sweet bell peppers. Perfect as a main dish or a side.

Ingredients

- 500 g frozen sliced potatoes
- 6 dl milk (low-fat or milk drink)
- 3 dl wheat flour
- 3 eggs
- 1 tsp salt
- 1 tsp curry powder
- 140 g bacon, chopped
- 1 onion, chopped
- 1 red bell pepper, diced

Instructions

1. In a bowl, mix the milk, wheat flour, and eggs. Season the mixture with salt and curry powder. Let it sit for about 30 minutes.
2. In a skillet, cook the bacon until crispy. Add the chopped onion and sauté until soft.
3. Add the diced bell pepper to the skillet and cook for an additional couple of minutes.
4. Combine the soaked potato mixture with the bacon, onion, and bell pepper mixture.
5. Pour the combined mixture into a greased baking dish and bake at 200°C (400°F) for about 30-40 minutes, or until the top is golden brown and the potatoes are cooked through.
