Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g grated Parmesan cheese
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted boiling water according to the package instructions.
2. Meanwhile, cut the bacon or pancetta into small pieces and fry them in a pan until crispy.
3. In a bowl, separate the eggs and add the grated Parmesan cheese. Mix well and season with salt and black pepper.
4. Once the pasta is cooked, drain it and reserve a little pasta water.
5. Add the hot pasta to the pan with the bacon. Remove the pan from the heat and quickly add the egg mixture, stirring to combine so that the eggs cook gently with the heat of the pasta without scrambling.
6. If needed, add a little reserved pasta water to achieve a creamy consistency.
7. Serve immediately, garnished with fresh parsley if desired.
