Ingredients

- 1 tablespoon sugar
- 1 teaspoon vanilla sugar
- 100 ml milk
- 200 g soy flour
- 2 eggs
- 1 teaspoon salt
- Butter for frying
- 200 g all-purpose flour

Instructions

1. In a bowl, mix the dry ingredients (soy flour, all-purpose flour, sugar, vanilla sugar, and salt).
2. Add the eggs and milk to the mixture. Stir well until the batter is smooth. The batter should be more liquid than thick.
3. Let the batter rest in the refrigerator for about an hour.
4. Use a blender or whisk to mix the batter again just before frying.
5. Heat butter in a pan and pour the batter into the pan. Fry the pancakes over medium heat until golden brown on both sides.
6. Serve warm with berries or whipped cream if desired.
