Ingredients:
- 1 zucchini
- 4 eggs
- 1 dl milk
- Salt to taste
- Pepper to taste
- 100 g cheese (e.g., cheddar or mozzarella)
- 1 dl chopped fresh basil or parsley (optional)
- 1 tbsp oil for frying
Instructions:
1. Preheat the oven to 200°C (390°F).
2. Slice the zucchini into thin rounds.
3. Heat the oil in a frying pan and sauté the zucchini slices for a few minutes until they soften slightly.
4. In a bowl, whisk together the eggs, milk, salt, and pepper.
5. Spread the sautéed zucchini in an ovenproof dish.
6. Pour the egg mixture over the zucchini.
7. Sprinkle grated cheese and fresh herbs on top if using.
8. Bake in the oven for about 25-30 minutes, until the omelette is set and the top is golden brown.
9. Allow to cool slightly before serving. Enjoy warm!
