Peach Muffins with Blueberries and Basil

Delicious summer muffins combining ripe peaches, blueberries, and basil. Perfect for breakfast or a snack! Preparation Time: 45 minutes
Serving Size: 12-14 muffins
Ingredients:
- 4 1/2 cups all-purpose flour
- 2 tsp baking powder
- 175 g melted butter
- 2 eggs
- 2 cups milk
- 1 3/4 cups sugar
- 3 peaches
- A couple of sprigs of basil
- 1 cup blueberries
Instructions:
1. Let the eggs and milk come to room temperature about an hour before baking.
2. Preheat the oven to 175°C (350°F). Melt the butter and let it cool slightly.
3. In a bowl, combine the flour and baking powder.
4. In another bowl, crack the eggs, add the milk and mix. Stir in the sugar and the slightly cooled melted butter.
5. Dice the peaches and chop the basil leaves. Mix the peach cubes and basil into the wet ingredients.
6. Combine the wet and dry ingredients, mixing quickly. Gently fold in the blueberries.
7. Divide the batter into a muffin tin. Optionally, top with peach slices.
8. Bake in the oven for 25-35 minutes until the tops are golden brown. Let cool in the muffin tin for a moment, then transfer to a wire rack to cool completely.
