A classic Italian dish that comes together quickly and easily, combining pasta, eggs, cheese, and bacon for a delicious meal. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 400 g pasta (e.g., spaghetti) - 150 g bacon or guanciale
- 3 large eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. 2. Cut the bacon into small cubes and fry it in a pan over medium heat until crispy. Add the minced garlic and cook for an additional minute.
3. In a bowl, whisk together the eggs and add the grated Parmesan cheese. Season the mixture with salt and black pepper.
4. When the pasta is cooked, drain it, reserving some of the pasta water.
5. Combine the hot pasta with the bacon and garlic in the pan. Remove the pan from heat.
6. Quickly add the egg mixture to the pasta and toss to combine. If needed, add a little reserved pasta water to create a creamy consistency.
7. Serve immediately, topped with extra grated Parmesan cheese and fresh parsley if desired.
