A delicious apple pie with a tropical twist from coconut.
Preparation Time: 1 hour
Serving Size: 8 servings
Ingredients:
Dough:
- 125 g butter or margarine
- 3½ dl all-purpose flour
- 2 tbsp sugar
- 1 egg
- 1 tbsp cold water
Filling:
- 3-4 apples (peeled and sliced)
- 1 dl shredded coconut
- 1 dl sugar
- 1 tsp cinnamon
- 2 tbsp lemon juice
Instructions:
1. Prepare the dough: Melt the butter and mix it with the sugar.
2. Add the egg and cold water, and mix well.
3. Gradually add the flour and knead until smooth.
4. Press the dough into the bottom and sides of a pie dish.
5. Spread the sliced apples over the crust.
6. Sprinkle the shredded coconut, sugar, and cinnamon over the apples.
7. Mix the lemon juice and pour it over the filling.
8. Bake at 175°C (350°F) for about 30-40 minutes until the top is golden brown.
9. Allow to cool before serving. Enjoy!
