A delightful treat featuring tart lingonberries, perfect for breakfast or a snack.
Preparation Time: 30 minutes
Serving Size: Makes 12 muffins
Ingredients:
- 2 eggs
- 1½ dl sugar
- 3 dl all-purpose flour
- 1 dl potato flour
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 1 tsp ground cardamom
- 1 dl milk
- 70 g butter
- 2 dl lingonberries
Instructions:
1. Whisk the eggs and sugar together until light and fluffy.
2. Melt the butter in a saucepan with the milk.
3. In a separate bowl, mix the dry ingredients (all-purpose flour, potato flour, baking powder, vanilla sugar, and cardamom) and then combine them with the egg-sugar mixture along with the butter-milk mixture.
4. Gently fold in the lingonberries into the batter.
5. Place paper liners in a muffin tray and spoon or pipe the batter into the liners.
6. Bake at 175°C (347°F) for about 15 minutes (or 165°C (329°F) for about 15 minutes in a convection oven).
7. Check the muffins for doneness with a toothpick.
