Ingredients:

- 800 g beef (e.g., chuck or shank)
- 2 tbsp oil
- 1 large onion
- 3 garlic cloves
- 4 medium potatoes
- 3 carrots
- 2 dl red wine
- 6 dl beef broth
- 2 bay leaves
- 1 tbsp fresh rosemary (or 1 tsp dried)
- Salt and pepper to taste

Instructions:

1. Cut the beef into cubes. Heat the oil in a large pot and brown the beef cubes on all sides. Remove the meat and set aside.
2. Peel and finely chop the onion and garlic. Add them to the pot and sauté until they are soft.
3. Peel and chop the potatoes and carrots. Add them to the pot with the onion mixture.
4. Pour the red wine into the pot and let it simmer for a few minutes. Add the beef broth, bay leaves, and rosemary.
5. Return the browned beef cubes to the pot and season with salt and pepper.
6. Allow the stew to simmer on low heat with the lid on for about 1.5 hours or until the meat is tender.
7. Serve the stew warm, ideally with fresh bread.
