Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted boiling water according to package instructions until al dente.
2. Cut the bacon or pancetta into small pieces and fry them in a large pan until golden brown. Add the minced garlic to the pan and sauté for another minute.
3. In a bowl, crack the eggs and mix in the grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the pasta is cooked, drain it, reserving a bit of the cooking water. Add the pasta to the pan with the bacon and toss well.
5. Remove the pan from heat and add the egg mixture to the pasta, stirring quickly so the eggs cook from the residual heat but do not scramble. Add a little reserved cooking water if needed to keep the mixture creamy.
6. Serve immediately, garnished with fresh parsley and additional grated Parmesan cheese if desired.
