Ingredients:
- 4 eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 can tuna (about 150 g)
- 1 small cauliflower
- 2 tablespoons olive oil
- 50 g cheese (e.g., cheddar or mozzarella), grated
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Wash and chop the cauliflower into small pieces. Toss the cauliflower with olive oil, salt, and pepper.
3. Spread the cauliflower on a baking sheet and roast in the oven for about 15-20 minutes, until golden brown and crispy.
4. Meanwhile, whisk together the eggs, milk, salt, black pepper, and thyme in a bowl.
5. Add the drained tuna to the egg mixture and stir well.
6. Pour the egg mixture into a greased baking dish and top with the roasted cauliflower and grated cheese.
7. Bake in the oven for about 20-25 minutes, until the omelette is set and the top is a beautiful golden brown.
8. Let it cool slightly before serving.
