Serving Size: 4 servings
Ingredients:
- Oil for frying
- 2 onions, chopped
- 3 garlic cloves, minced
- 400 g cooked seitan, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp oregano
- 400 g crushed tomatoes
- 1 dl green beans (fresh or frozen)
- 1 dl corn (fresh or frozen)
- Fresh parsley for garnish
Instructions:
1. Heat oil in a pan over medium heat.
2. Add the chopped onions and sauté until soft and golden brown.
3. Stir in the minced garlic and cook for another minute.
4. Add the chopped seitan to the pan and sauté until it browns slightly.
5. Season the mixture with salt, black pepper, paprika, cumin, and oregano. Mix well.
6. Pour in the crushed tomatoes and stir. Let it simmer on low heat for about 10 minutes.
7. Add the green beans and corn, mix, and cook for another 5 minutes.
8. Serve warm, garnished with fresh parsley.
