Ingredients:
- 4 lamb loin chops
- 4 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons rosemary (fresh or dried)
- 2 teaspoons thyme (fresh or dried)
- Steamed green beans (for serving)
- Roasted potatoes (for serving)
- Béarnaise sauce (for serving)
Instructions:
1. Ask your butcher to flatten the lamb loin chops with a meat tenderizer or pound the meat yourself between plastic wrap until evenly thick.
2. Place the chops in a plastic bag and pour in the olive oil. Add salt, black pepper, rosemary, and thyme.
3. Allow the meat to marinate in the mixture for 4 hours or overnight in the refrigerator.
4. Drain the chops from the marinade and let them come to room temperature.
5. Heat a cast-iron skillet or grill pan. Cook the chops for about 2-3 minutes on each side, until they reach your desired doneness.
6. Season the finished chops with additional salt and pepper.
7. Let the chops rest for a few minutes covered with foil before serving.
8. Serve the marinated lamb chops with steamed green beans, roasted potatoes, and Béarnaise sauce.
