This delicious and creamy mushroom soup is a perfect starter or light main dish. It's quick and easy to prepare, making it ideal for both everyday meals and special occasions. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g fresh mushrooms - 1 large onion
- 2 garlic cloves
- 3 tbsp butter
- 1 l vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion and garlic. 2. Clean the mushrooms and slice them.
3. Heat the butter in a pot over medium heat. Add the onions and garlic, sautéing for about 5 minutes until soft.
4. Add the sliced mushrooms to the pot and cook for about 5-7 minutes until they are tender.
5. Pour in the vegetable broth and let the soup simmer on low heat for about 10 minutes.
6. Blend the soup with an immersion blender or in a blender until smooth.
7. Stir in the cream and mix well. Heat gently, but do not boil.
8. Season with salt and pepper. Serve the soup garnished with fresh parsley.
