A delightful and easy vegetable pasta bake that is perfect for a family meal. This delicious dish combines pasta and vegetables in a creamy cheese sauce.

Ingredients:

- 5 dl high-fiber pasta
- Oil for sautéing
- 2 carrots
- 1 red bell pepper
- 200 g zucchini
- 400 g crushed tomatoes
- 1 tsp thyme
- 0.5 tsp salt
- 0.5 tsp black pepper
Cheese Sauce:
- 5 dl milk
- 2 tbsp all-purpose flour
- 150 g grated cheese

Instructions:

1. Cook pasta in salted boiling water until nearly done. Drain well.
2. Chop vegetables into small cubes and sauté in oil in a pan.
3. Add crushed tomatoes, thyme, salt, and black pepper to the pan. Let simmer for a moment.
4. Prepare the cheese sauce: Mix flour with cold milk and heat while stirring for a few minutes until it thickens slightly. Add grated cheese and stir until melted.
5. In a baking dish, layer the pasta, vegetable-tomato mixture, and cheese sauce.
6. Bake at 200°C (392°F) for about 30 minutes, until the top is golden brown.
7. Serve the bake with a fresh salad.
