A delicious and quick snack that combines cheese, honey, and nuts with gingerbread cookies. Perfect for serving at parties or with coffee.

Serving Size: 4-6 servings
Ingredients:
- 4 tsp pine nuts
- 4 tsp plain cream cheese
- 4 gingerbread cookies (preferably thin whole grain)
- 4 tsp liquid honey
- Dried thyme
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Toast the pine nuts in a dry pan until golden brown.
3. Spread the cream cheese evenly over the gingerbread cookies.
4. Make a small indent in the center and drizzle honey into it.
5. Sprinkle the toasted pine nuts and a pinch of dried thyme on top of the cheese.
6. Heat in the oven for about 2 minutes, until the cheese slightly melts.
7. Serve immediately while warm.
