Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 150 g bacon or pancetta
- 2 large eggs
- 100 ml cream
- 50 g Parmesan cheese (grated)
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional, for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Meanwhile, chop the bacon into small pieces and fry in a pan until crispy.
3. In a bowl, whisk together the eggs, cream, and grated Parmesan cheese. Season with salt and black pepper.
4. Once the pasta is ready, drain it, reserving about 100 ml of the pasta cooking water.
5. Add the hot pasta to the pan with the bacon and mix well.
6. Remove the pan from heat and pour the egg mixture over the pasta. Stir quickly to cook the eggs with the heat of the pasta without scrambling them.
7. If needed, add a little reserved pasta water to achieve a creamier consistency.
8. Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
