A nutritious and tasty choice for a light lunch or snack.
Preparation Time: 20 minutes
Serving Size: 4 wraps
Ingredients:
- 4 whole grain wraps or tortillas
- 1 avocado
- 1 cup fresh spinach
- 1 carrot, grated
- 1/2 cucumber, sliced
- 1/2 red bell pepper, sliced
- 1/4 cup hummus
- Salt and pepper to taste
- Lemon juice (optional)
Instructions:
1. Spread hummus evenly over each wrap.
2. In the center of each wrap, layer spinach, grated carrot, cucumber slices, red pepper, and sliced avocado.
3. Season with salt, pepper, and lemon juice if desired.
4. Fold the bottom of the wrap up, then tuck in the sides and roll the wrap tightly.
5. Cut the wraps in half and serve immediately.
