Ingredients:
- 1 cup chickpeas (cooked or canned)
- 1/2 cup rolled oats
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 cup grated carrot
- 1 cup fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 1 egg (or vegan alternative, such as flax egg)
- 2 tbsp olive oil for frying
Instructions:
1. Rinse the chickpeas and mash them lightly, leaving some texture.
2. In a bowl, combine the mashed chickpeas with oats, onion, garlic, grated carrot, parsley, salt, black pepper, and paprika. Mix well.
3. Add the egg (or vegan alternative) and stir until the mixture is uniform.
4. Shape the mixture into patties of your desired size.
5. Heat the olive oil in a pan over medium heat and fry the patties for about 3-4 minutes on each side, until golden brown and crispy.
6. Remove the cooked patties and place them on paper towels to absorb excess oil.
7. Serve warm, for example with salad or yogurt sauce.
