A tasty and nutritious stuffed pepper recipe perfect for a weeknight dinner or weekend treat. Preparation time is about 45 minutes and serves 4.
Ingredients:
- 4 large bell peppers (e.g., red or yellow)
- 300 g ground beef (or chicken)
- 1 dl rice
- 1 onion
- 2 garlic cloves
- 1 can crushed tomatoes (about 400 g)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 100 g cheese (e.g., grated cheese)
Instructions:
1. Cook the rice according to the package instructions.
2. Peel and chop the onion and garlic.
3. Heat the olive oil in a large skillet. Add the onion and garlic, and sauté for a few minutes.
4. Add the ground meat to the skillet and brown it. Season with salt, pepper, paprika, and oregano.
5. Stir in the cooked rice and crushed tomatoes. Let the mixture simmer on low heat for about 10 minutes.
6. Cut the tops off the bell peppers and remove the seeds. Fill the peppers with the meat mixture.
7. Place the stuffed peppers in a baking dish and sprinkle grated cheese on top.
8. Bake at 200°C (392°F) for about 25-30 minutes, until the peppers are tender and the cheese is golden brown.
