Ingredients:
- 2 cups flour
- 1 cup rolled oats
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 cup olive oil
- 2 eggs
- 5.3 oz fresh spinach (chopped)
- 3.5 oz feta cheese (crumbled)
- 1/2 cup grated Parmesan cheese (optional)
Instructions:
1. Preheat the oven to 400°F (200°C). Grease the muffin tins or use paper liners.
2. In a bowl, mix together the flour, rolled oats, baking powder, and salt.
3. In another bowl, whisk together the milk, olive oil, and eggs.
4. Add the wet ingredients to the dry ingredients and mix gently.
5. Fold in the chopped spinach and crumbled feta until evenly distributed.
6. Divide the batter among the muffin tins, filling them about 2/3 full.
7. Sprinkle grated Parmesan cheese on top, if using.
8. Bake in the oven for about 20-25 minutes, or until the muffins are golden brown and cooked through.
9. Allow to cool slightly before serving.
