Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 ml grated Parmesan cheese
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- (Optional: lemon juice and pine nuts for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté until soft and fragrant.
3. Add the fresh spinach to the skillet and cook until slightly wilted.
4. Pour the cream over the spinach and mix well. Let the sauce simmer on low heat for about 2-3 minutes.
5. Add the cooked pasta to the sauce and mix. If the sauce is too thick, you can add a little reserved cooking water.
6. Stir in the grated Parmesan cheese and season with salt and black pepper. Mix well.
7. Serve immediately, and if desired, add lemon juice and pine nuts for garnish.
