Ingredients:
- 300 g pasta (e.g., tagliatelle or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 ml grated Parmesan cheese
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. Drain and reserve a little pasta water.
2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
3. Add fresh spinach to the skillet and cook until it is completely wilted.
4. Pour the heavy cream into the spinach and mix well. Let the mixture simmer on low heat for about 5 minutes.
5. Stir in the grated Parmesan cheese and mix until the cheese has melted. Season with salt and black pepper to taste.
6. Combine the cooked pasta with the sauce. If the sauce is too thick, add a little reserved pasta water.
7. Serve immediately, garnished with fresh basil if desired.
