A delicious and nutritious dish, perfect for spring showers. This soup is quick to prepare and makes a great appetizer or light main course.

Ingredients:
- 500 g fresh broccoli
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Rinse the broccoli and cut it into small pieces.
2. Peel and finely chop the onion and garlic.
3. Heat the olive oil in a pot over medium heat. Add the onion and garlic, and sauté for about 5 minutes until soft.
4. Add the broccoli to the pot and pour in the vegetable broth. Bring to a boil and simmer for about 10 minutes until the broccoli is tender.
5. Stir in the cream and blend the soup with an immersion blender or in a countertop blender until smooth.
6. Season with salt and pepper. Heat the soup again, but do not let it boil.
7. Serve the soup hot, garnished with fresh parsley.
