Coconut Cake (Kookoskakku)

A deliciously moist coconut cake, perfect for any occasion. Preparation Time: 1 hour
Serving Size: 10 slices
Ingredients:
- 200 g butter- 200 g sugar
- 4 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- 200 ml coconut milk
- 100 ml condensed milk
- 100 g shredded coconut
- (grated white chocolate for decoration)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.2. In a bowl, cream the butter and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In another bowl, combine the flour and baking powder. Gradually add this mixture to the butter mixture, alternating with the coconut milk. Mix until well combined.
5. Pour the batter into the prepared cake pan and bake for about 30-35 minutes, or until golden brown and a toothpick comes out clean.
6. Remove the cake from the oven and let it cool slightly. Poke holes in the top of the cake with a fork.
7. Mix the condensed milk and coconut milk together. Pour this mixture over the cake, allowing it to soak into the holes.
8. Sprinkle shredded coconut on top of the cake, and if desired, decorate with grated white chocolate.
9. Let the cake sit before serving to allow the flavors to meld. Enjoy!
